Before you start cutting, you want to make sure that you have everything ready. The rind and fiber of the jackfruit contain a sticky latex like substance that is very difficult to remove from things, so I recommend putting a tablecloth or plastic bag over your working area.

You will also need coconut oil to coat your knife. This will prevent them from becoming ruined from the sticky juice of the jackfruit.

After you have covered your work surface, coat the blade of you knife with coconut oil.

When you are ready to begin, cut your jackfruit in half, lengthwise.  The core is quite tough and difficult to cut through, so I found using a serrated knife as the best choice to get all the way through the fruit cleanly.

Pull the segments apart.  At this point you can use your knife to aid in separating through the core.

Remove the yellow fruit from the white fiber and mulch the fiber and skin.  Each segment of fruit contains a seed, make sure that you save the seeds as they are edible as well.  This part takes a little while so get comfortable.  Don’t let all of your hard labor go to waste, make sure you are sampling your bounty along the way.  After all, you need nourishment for all of this hard work.

When you are finished you will end up with a large pile of fruit and seeds.

Unless you are having a large party and planning on eating all of the fruit right away, you want to put all of the fruit in Ziplock bags and store in the freezer until needed.
